If your getting spikes you may be feeding too much.
As VM has said some seachem stability or tetra safe start may help settle things as long as the readings are below 1ppm

ok thanks, will have to do water changes until things are low and try stay on top. will reduce feeding too. im considering seachem products now, if i purchase seachem prime how quick can i use that in my tank like do i have to wait for it to dechlorinate?

I normally add it to the bucket, give it a swish around to mix in and then add it to the tank. Probably only a couple of minutes between prime then being in the tank.

I don't even swish it, just syringe it in as the water flows from the tap into the bucket then straight in the tank(s).
