If I remember correctly (I believe it was Vale! who told me) when cycling the nitrite hits 5.14ppm as thats how much 2ppm ammonia produces.
I know certain things can affect the cycle and cause it to stall (low ph) or take longer (lower temps) but i dont nitrite is one of them. It just looks like its stalled as its off the charts and doesnt move for a bit

No, nitrite isn't one of the stalling factors.
It is normally the lack of carbonates that stall cycles (hence the drop in ph).
As Iain says, the nitrites stay high for around 10 days.

The nitrates arent a problem at that level, theres only a small number of fish that are over sensitive to nitrate. Mines around the same from the tap
When the nitrites drop you want 3 days of 0ppm ammonia and nitrite, while still topping up to 2ppm ammonia. Once you have 3 days of clear readings, do a large water change (remember to condition/dechlorinate the water) to refresh the water/minerals and remove any excess nitrates then go fish shopping

Maybe there or there abouts, i cant say for definite as every cycle is different, even if you cycled another tank/filter now it could take less or more time than your current one.
But following the general patterns of cycling you might be able to get fish before Christmas, but as my own rule goes “no promises and no guarantees”

So good news!
My nitrite levels plumeted 3 days ago......but only down to 0.5ppm. I've carried on topping up the amonia and the nitrite still keeps dropping back to 0.5.
Please tell me this bit doesn't drag on for another lifetime! lol.
