No oxygen in the water or it's too warm.
Cool water changes, don't have to be big ones.

If in doubt, always do a water change.

Stayed up last night keeping an eye on things and no more gasping at the surface or odd behaviour. Went to bed mildly relaxed.
Woke up this morning, fish all seem happy. Put another dose of the Interpet bacteria & fungus treatment.
Popped over to our friends place to get the last few stragglers from his tank, just a few more platys and Amanos. Got another bag of plants too including some lovely swords and lotus. Spend time planting those while the fish and shrimp drip acclimate.
Everything looks happy, after a few hours I put the new guys in, clean the glass outside from the splashes aaaaand....spot my male Rainbow dead on the floor of the tank
He had shown no signs of problems yesterday and was one of the fish NOT gasping when the others were. Nothing obvious on him, no growths, no wounds, no pineconing, just dead with his mouth wide open.
Tested water, again, all fine, again. Temp steady, ph steady at 7.6, ammonia nitrite both 0, nitrate 20-40.
Just feel so frustrated.

Sorry for your loss
I dont know what to suggest to point to a specific issue. The lack of oxygen was the most obvious. I can’t remember if rainbows are particularly sensitive to medications

To the tune of “the saints go marching in”:
Oh fluffy sheep! Oh fluffy sheep! Oh fluffy sheep are wonderful, they’re white Welsh and fluffy! Oh fluffy sheep are wonderful!

It happens, just have to learn from it.
Do you keep an aquarium log, always very useful to keep notes.

Dug out an air pump I had from a while back and got it going. It doesnt have an air stone yet (need to buy one, the old one had broken) so its just ejecting air off the end of the hose, but seems to have helped as no more gasping from anybody over the remainder of the weekend.
I guess with all the fish I've rehomed I've maybe tipped past the point of the setup I had producing enough o2, so it needed a kick.
